Cut from our 23 pound clothbound wheels, these beautiful big wedges are available in lieu of our comparably aged 2.5 pound wheels, which (other than Unusually Sharp 2019) are not available. Normally shipped sealed in wax, but tell us if you would prefer vac-sealing. Please note that the more aged the cheese, the more powerfully sharp it will typically be--which can be too sharp for many!
