A generous 2.5 pound waxed wedge from our big clothbound wheels of Crowley made with Jersey cow milk from Jersey Girls Dairy in 2018. The Jersey milk really benefits from the long aging, as the intense buttery characteristic of this cheese finds balance with the increased complexity that the aging brings. This is a very "cheesy" mouthful--a more intense cheese than Crowley made with Holstein milk.
